- 120 grams good quality semi sweet chocolate
- 300 grams white sugar
- 200 grams brown sugar

- 1 cup organic cocoa powder
- 1 TS Himalayan salt
- For the frosting:
- 220 grams unsalted butter (room temperature very important)
- 120 grams Philadelphia cream cheese (room temperature very important)
- 1/2 cup organic cocoa powder
- 450 grams icing sugar
- 1 TS vanilla extract
- 1 TS Himalayan salt
- For the chocolate ganache:
- 120 grams good quality dark chocolate chopped
- 170 ml heavy cream
Steps to make to make Brownie Fudgy Chocolate Birthday cake š
- First make the brownie cake mix. This will be a 3 flour cake so you can also make the brownie cake floors the day before and keep it in the fridge wrapped individually in cling wrap.
- Prepare your ingredients - I used one cake pan 9 inches and 2 of 7,5 inches each in diameter. Preheat your oven on fan at 170 degrees celsius.

- Now let the brownie cakes inside the cake tins for 1 hour to cool down completely. Then remove from cake tin and leave for another hour or two to cool down in a cooking rack or plate. After that you can wrap them individually in cling wrap and place in the fridge over night.


- Time to make the frosting! In a bowl add butter and cream cheese and mix with a hand stand mixer until smooth. Add cocoa powder and mix some more, now add slowly the icing sugar and mix. Once done it will look like this. Add vanilla extract and salt and mix for 10 more seconds. Now it is ready.

- Remove the 3 brownie cakes from fridge and also remove the baking wrap from the 2nd and 3rd cakes. Keep the baking paper on the first flour of the cake for now. Place in a big plate the first flour cake and add some frosting.



- Now place the second flour of the cake on top and add some frosting. Then place the top section “last flour”, and place in the fridge for 1 hour for the frosting to set. We do this so then we can add the rest of the frosting on the cake and around it.



- For the ganache: in a pot melt together over low heat chocolate and cream. Let cool for 10 min. Then remove cake from fridge and with a spatula pour over the cake and turn cake around so the chocolate ganache goes everywhere.



- Now place in the fridge before you add the final decorations of your choice. I added chuckles cut in half and made my boys S and 1 for his name and bday.
